2 lbs (1 kg) fresh carrots, peeled and grated into long thin matchsticks

1 tablespoon sugar

Instructions

Place the grated carrots in a large mixing bowl.

Add salt and sugar, then gently massage the carrots with your hands until they soften slightly and begin releasing their natural juices.

Create a small well in the center of the carrots and add the minced garlic along with the spices. Do not mix yet.

Heat the vegetable oil in a small pan and fry the chopped onion until it becomes golden and aromatic.

Carefully strain the hot oil over the garlic and spices in the center of the carrot mixture. The heat helps release the aromas of the spices.

Add the vinegar and chopped fresh herbs.
